Wine was first fermented in China, Whiskey in Scotland, Brandy in France, and Rum—well, rum was born in India. 

Indian rum, made with the oil that once ruled the sweet world, Jaggery, finds mention in our epics of the past. 

In fact, history tells us that while the sages discoursed about Satyam - Shivam-Sundaram, it was Sura - Madya - Shidhu that kept both the elite and common man happy, imbibing a syncretic culture that stands to this day. 

Huli has been created as an answer to one simple question – why don’t we have traditional Indian liquor traditions in modern form? We have been proud of creating western liquors like whisky, gin, even tequila etc locally but our own traditions have not found the same love. All liquors have gone through a stage of refinement with the advent of modern chemistry. Vodka had none other than Mendeleev (yes, the same – inventor of the periodic table) help modernize it.

With that question in mind, we at Huli, made our first liquor from Jaggery. It is a 1000+ year tradition all across India. We found many people sharing stories of how their families used to make these at home in earthen pots and it is still a living tradition much of rural India.

The journey doesn't stop here. Many more authentic Indian spirits await modernisation in the labs of Huli.
